This is one of my all time favourite dish for breakfast when i was young. The coffee shop near us recently started selling this, but it tastes quite bland and i have to make so many special requests to make it abit nicer. I am so freaking proud that i know how to make this now. My sauce is extremely flavourful and i absolutely loved every bit of it. My biggest surprise is when my fussy ang moh husband cleaned his dish and told me how much he loved it. Freshly made homemade noodles, tender pork belly slices that is braised to perfection in a flavourful gravy that made me proud the minute i tasted it. My secret to the gravy, besides the spices, is the addition of chopped black fungus. It gave the gravy a depth of flavour and texture. I can proudly say that this is the best bowl of Lor Mee that i have ever eaten!

Ingredients: (Serves 5-6)
- 4 cups water
- 1 cup dark soy sauce
- 1/4 cup rock sugar cubes
- 6- 7 garlic cloves, sliced thinly
- 1 medium ginger, peeled and sliced
- 1 tbsp five spice powder
- 400g-500g pork belly (whole)
- 1 cup black fungus, chopped
- Hard boiled eggs
- 1/4 tsp salt
- 2 tbsp sugar
- 2 tbsp light soy sauce
- 1/8 cup chinese black vinegar
- 1 1/2 cup water
- 3 eggs, beaten
- 1/2 cup corn flour mixed with some water
- Yellow noodles
- Bean sprouts
- Minced garlic, chopped chinese celery and chilli, to garnish
- More black vinegar as topping, to taste
Method:
- Add in 4 cups water, dark soy, rock sugar, garlic, ginger and five spice in a large pot. Mix well and bring to boil.
- Add in pork belly, cover and simmer for about 20 minutes.
- Add in boiled eggs and black fungus. Simmer for another 20minutes.
- Remove ginger, pork belly and eggs. Set aside.
- Add salt, sugar, light soy black vinegar and water. Bring to boil.
- Slowly stir in eggs into the boiling liquid.
- Add in corn flour mixture slowly while stirring until thickened.
- Gravy is now ready.
- Slice pork belly in thin slices.
- Cook noodles and bean sprouts and place in a bowl.
- Top with gravy, pork belly, hard boiled eggs, minced garlic, chinese celery and chilli.
- Add more black vinegar to taste
- You may serve this with your favourite toppings. Examples are fishcake, ngoh hiang, fried wantons, fried fish.
