Peri Peri Chicken with homemade Peri Peri Sauce

I wanted to try something different this Easter and i thought that this Nando’s copycat dish would be something perfect for me to learn! It turned out juciy, succulent and the marinade and sauce is to die for! Even our little Ah Ma was full of praises for it and she ended up eating the most! It is not a difficult dish to make but definitely one that can impress your loved ones! ❤

Recipe adapted from delishar.

Ingredients:

  1. 1.3kg chicken, spatchcocked
  2. 1 -3 chilli padi, adjust to spice level preferred
  3. 1 red pepper
  4. 1 1/2 tsp salt
  5. 1 tsp cracked black pepper
  6. 1 tsp italian herbs
  7. Handful of basil leaves
  8. 4 tbsp olive oil
  9. 2 tbsp Worcestershire sauce
  10. 3 tbsp lemon juice
  11. 2 1/2 white vinegar
  12. 1/2 tbsp cayenne pepper
  13. 2 shallots
  14. 6 cloves garlic
  15. Splash of water
  • Peri peri sauce
  1. 1/2 cup reserve marinade
  2. 1 tsp sugar
  3. 1 tbsp water

Method:

  1. Place all ingredients in a blender until you get a smooth paste
  2. Reserve 1/2 cup of paste and use the rest to marinade the chicken overnight.
  3. I placed our favourite vegetables in a roasting tray before putting the chicken over it. Toss vegetables in some olive oil/duck fat and season with salt and pepper.
  4. In a preheated oven, bake chicken for about 1 hour at 200deg.
  5. Change to grill mode and grill for about 10 minutes until slightly charred.
  6. To make peri peri sauce, simmer over low heat until sauce is thick and fragrant.
