Kimchi Cheese Ravioli

Ben asked for ravioli and ravioli he gets!Β  Tried a new combination of flavours and it was the bomb! I feel like a genius for this combination! Kimchi, cheese, pork wrapped in pasta and served with homemade marinara sauce, it was a winning combo and i definitely preferred this to the beef type raviolis.

Ingredients:

-Ravioli Fllings:

  1. 3/4 cup kimchi, chopped
  2. Parsley, chopped
  3. 1 small onion, chopped
  4. 3 cloves garlic, chopped
  5. 300g minced pork
  6. Cheddar cheese
  7. Salt and pepper
  8. 1 large egg yolk

-Sauce

  1. Marinara sauce
  2. 2 small scoops of pasta water
  3. knob of butter
  4. salt and pepper
  5. Parsley, to serve

Method:

  1. Mix all ingredients for the fillings together. Wrap in pasta skin, i used wanton skins and they were perfect.
  2. Cook raviolis in hot boiling water for about 5 minutes until cooked.
  3. Heat up marinara sauce in a pan. Add in pasta water and let it cook briefly.
  4. Add in raviolis, butter, salt and pepper. Cook briefly until butter is melted.
  5. Top with parsley and parmesan before serving.
