French Crepes

I tried making this many years ago and i did not get a good result as this is not an easy dish to make. I never attempted to make them again as i did not have the courage to try once more. I finally got around to it again after encouragement from Ben and they turned out absolutely perfect! I am now so excited to make all sorts of variations of this dish, savoury and sweet. I guess the never-say-die attitude is what we really need in the kitchen to better ourselves πŸ˜€

Recipe adapted from Alton Brown.

Ingredients: (1 cup = 235ml)

  1. 2 large eggs
  2. 3/4 cup milk
  3. 1/2 cup water
  4. 1 cup plain flour
  5. 40g butter, melted
  6. Butter, for greasing

Method:

  1. Mix all wet ingredients in a large bowl. Add in flour and whisk until smooth.
  2. Cover and refrigerate for 1 hour.
  3. Grease a pan with butter and pour batter in over low heat. Swirl the pan and form thin layer of circular batter.
  4. Increase heat to medium low and when the underside is light brown, flip and fry briefly until light brown.
