I tried making this many years ago and i did not get a good result as this is not an easy dish to make. I never attempted to make them again as i did not have the courage to try once more. I finally got around to it again after encouragement from Ben and they turned out absolutely perfect! I am now so excited to make all sorts of variations of this dish, savoury and sweet. I guess the never-say-die attitude is what we really need in the kitchen to better ourselves 😀
Recipe adapted from Alton Brown.
Ingredients: (1 cup = 235ml)
- 2 large eggs
- 3/4 cup milk
- 1/2 cup water
- 1 cup plain flour
- 40g butter, melted
- Butter, for greasing
- Mix all wet ingredients in a large bowl. Add in flour and whisk until smooth.
- Cover and refrigerate for 1 hour.
- Grease a pan with butter and pour batter in over low heat. Swirl the pan and form thin layer of circular batter.
- Increase heat to medium low and when the underside is light brown, flip and fry briefly until light brown.
