Double Chocolate Chip Muffin (Doubled Recipe)

This is a recipe i blogged about previously but doubled up to make more muffins. As usual, this is a great recipe that yields, soft, moist and chocolatey muffins.

Recipe adapted from Delishar.

Ingredients: (Makes 15)

  1. 128g wholemeal flour
  2. 128g plain flour
  3. 150g castor sugar
  4. 64g cocoa powder
  5. 1 tsp baking soda
  6. 1 tsp baking powder
  7. 1/2 tsp salt
  8. 1 cup (175g chocolate chips)
  9. 245g yogurt
  10. 150ml milk
  11. 120ml corn oil
  12. 1 tsp vanilla essence
  13. 1 egg
  14. 1/4 cup chocolate chips, for topping

Method:

  1. Mix all dry and wet ingredients in separate bowls.
  2. Pour wet ingredients into the bowl with the dry ingredients. Gently mix until just combined. Do not overmix.
  3. Spoon into muffin cups until 3/4 full. Top with more chocolate chips.
  4. Bake in a preheated oven at 180deg for about 18-20mins until skewer is clean when inserted in the centre.
