Homemade Enchiladas & Sauce

I was looking for ideas on what to make for dinner as it is our day off. I wanted to make Ben something special to reward him for his efforts in quitting smoking. He is having a very hard time but hasn’t touched a cigarette in days! I am so proud of him! I was having a mental block on what to make until i saw a photo of a taco, and that totally got the juices running! We had premade store bought enchiladas once in Australia and Ben absolutely hated it so we never tried again. I was hoping of trying my luck in making a homemade one for him as I have a feeling that he is gonna love it. Beef, cheese tomatoes, all his favourite stuff, he’s gotta love it! So i did not cheat and made the sauce myself hoping it will bring out more flavour. Boy, i was right! The first thing i said after my first bite is, “lasagna can suck it!”. I meant every word of that! The beef was bursting with flavour, the spicy sauce and my homemade yogurt dressing, everything complimented each other perfectly. You have to try this easy recipe and you are sure to impress your guests. This is definitely one of my best dishes ever!

Ingredients:

  1. 300g minced beef
  2. 3 cloves garlic, chopped
  3. 1 medium onion, diced
  4. 1 tsp salt
  5. 1 tsp ground chillies
  6. 1/2 tsp cumin seeds
  7. Ground black pepper
  8. 1 tbsp plain flour
  9. 1/4 cup water
  10. 5 tortilla wraps
  11. Grated cheese
  12. Fresh coriander, chopped
  • For the Sauce
  1. 1 – 2 tbsp butter
  2. 1 tbsp plain flour
  3. Pinch of salt, ground chilies, cumin seeds and pepper
  4. 170g / 6oz pure tomato paste
  5. 1 1/2 cup chicken stock

Method:

  1. In a hot pan, heat a small amount of oil and saute garlic and onions until fragrant.
  2. Add in minced beef and lightly brown. Add in salt, ground chilies, cumin seeds and pepper.
  3. When the meat is brown and hot, add in flour and mix well. Pour in water slowly on medium high heat. Fry the meat until cooked through and there is no more liquid. Set aside to cool.
  4. To prepare the sauce, melt the butter in a pot. Add in flour and whisk till smooth.
  5. Add in salt, pepper, chilies and cumin. Whisk well.
  6. Add in chicken stock and bring to a gentle boil.
  7. While whisking, add in tomato paste and whisk to smooth. Bring to a gentle boil and sauce should be thick by then.
  8. In a large baking dish, spread some sauce all over it so that the tortillas will not stick to it later on.
  9. Wrap beef fillings in tortilla  wrap tightly. Place the wrapped roll facing down in the baking dish. Do the same for all the wraps.
  10. Spoon some sauce all over the wraps evenly. Spoon the sauce onto the sides of the baking dish with the remaining sauce. I had a small amount leftover.
  11. Top with grated cheese and chopped coriander.
  12. Bake in a preheated oven at 200 degrees for about 12 minutes until cheese is melted.
  13. Serve with your favourite condiments like salsa, guacamole etc. I made a cucumber and yogurt dressing to contrast with the spiciness of this dish.
