Breakfast Quesadilla

This is easily one of Ben’s favourite brekkie! He always cheers in excitement when he wakes up and sees this on his breakfast table. It really makes me so happy and makes all my hard work worth it whenever i see him so happy. ❤

I actually started making this a long time ago but i thought it was too simple of a dish to blog about. Thinking about it, there are plenty of dishes that i make but do not blog about as they are simple and easy. Now that i think of it again, there is nothing wrong with being simple or easy. It’s actually nice to have recipes of simple stuff, especially when you are short on time or energy, i can just look through my site for ideas. I am going to blog alot more, even on the simple stuff i make!

Ingredients: (Fillings are highly customizable to your liking)

  1. 2 tortilla wraps
  2. 2 eggs
  3. 2 tsp milk
  4. Pinch of salt
  5. Lettuce
  6. 2 slices of cheese
  7. Cherry tomatoes, sliced
  8. Pepper
  9. Japanese mayonaise

Method:

  1. Whisk eggs with salt and milk. Make scrambled eggs and set aside
  2. Place cheese, lettuce, eggs, tomatoes, pepper and mayo on tortilla wrap. Fold into half. Make 2 quesadillas.
  3. Heat oil in a pan, lightly fry tortilla on one side, flip when golden and crispy.
