Hainanese Pork Chops

IMG20151111194030.jpgIMG20151111193717.jpgIMG20151111193712.jpg Making this dish brings back fond memories of pounding the old school cream crackers with my sisters, using our trusted mortar and pestle (which my mom is still using) for my mom. My mom will make it quite traditionally, fry up the pork chops, cut into smaller pieces and fry it in a tomato based sauce. I haven’t eaten that dish from her in at least a decade! I was missing it so planned to make this on my awaited day off. Knowing Ben very well, i know he will definitely hate the tomato based sauce so i decided to make it plain for him but seasoning it well with the marinate. It was sucha hit and he wouldn’t stop saying how nice it is and how it’s the best ever. Made me really happy and all the effort is now worth it ❤

Ingredients:

  1. About 250g pork chops, pounded and tenderized (4 medium pieces)
  2. 1/2 tsp salt
  3. 1 tsp sugar
  4. 1 large egg, beaten
  5. 1/8 cup whole milk
  6. 1/2 tbsp corn flour
  7. Dash of black pepper
  8. about 100g cream crackers, crushed

Method:

  1. Marinate pork chops in all the ingredients except crackers for about 30minutes.
  2. Coat the meat in the crackers evenly
  3. Pan fry in a hot pan with olive oil until both sides are golden 🙂
