Butter Cheese Cupcakes

I was thinking of what cake to bake for my father for his birthday and was surfing the web when i saw some really beautiful fruit pastry cake. I loved how it looks but i am abit turned off by how heavy and dense the cake looks. I have always love either moist, light or fluffy cakes. That’s how i got the idea of decorating the cake like a fruit pastry but changing the cake base. I am very proud to say that this is my first very own recipe for a cake! The cake is everything that i love, moist and fluffy. Just note that this cake is quite sweet so not suitable for frosting, unless it’s just whipped cream. I didnt have much choices for fruits as fairprice seems completely out of strawberries and raspberries, fml. i will try again next time when i have more colourful, beautiful fruits =)

Ingredients:

  1. 1 1/2 cup caster sugar
  2. 2 1/4 cup cake flour, sifted
  3. 2 tsp baking powder (slightly lesser)
  4. 250g butter, softened
  5. 250g cream cheese, softened
  6. 1/3 cup whole milk
  7. 3 large eggs

Method:

  1. Preheat oven to 160 deg.
  2. Beat butter and sugar till light and fluffy
  3. Add in eggs, one at a time (if your eggs are small, add an extra yolk
  4. Add cream cheese, beat until smooth
  5. Add in flour, beat briefly till smooth. Do not overbeat
  6. Spoon into lined muffin tray and top with fruits of your choice
  7. For regular muffin size, bake for 25mins until skewer inserted comes out clean
