Angel Cupcakes with Buttercream Frosting

I was looking for a healthy recipe for cupcakes when i came across this excellent idea. Who knew that a cupcake that is low in sugar and has no butter nor oil could taste so amazing?! Soft, fluffy, guilt-less (almost), this is our current facourite cupcake. I used the recipe from mysanfranciscokitchen.com and it was initially a recipe for mini cupcakes. I did both mini and regular sized and turns out the regular sized is a lil nicer than the minis, even though both were wiped on the day, haha!

Ingredients:

4 large eggwhites

1/2 tsp cream of tartar

1/4 cup caster sugar

1/2 tsp vanilla extract

1/2 cup icing sugar

1/3 cup plain flour

Fresh fruits of your choice

Method:

  1. Preheat oven to 180 degrees
  2. Whisk eggwhites till foamy
  3. Add cream of tartar and whisk till soft peaks
  4. Add sugar and vanilla and whisk briefly till mixed
  5. Combine icing sugar and flour in a bowl
  6. Gently fold in dry ingredients to batter, 1/3 at a time
  7. Bake for about 20mins until top is golden
  8. Frost when cooled and top with your favourite fruits

Buttercream Frosting

1/2 cup (113g) butter, softened

1 3/4cup icing sugar

1 tbsp milk

1 tsp vanilla extract

Beat butter until fluffy. Blend in icing sugar in 3 batches. Add milk and vanilla, beat until smooth.
