The Best Blueberry Cheese Butter Cake


IMG20150803210433.jpgIMG20150803211000.jpgBen was very underwhelmed when he saw the cakes cooling in the kitchen. He was commenting that it looks so plain, asking me if I was going to frost it. Ah Ma on the other hand kept saying that it’s beautiful. Don’t let this plain jane cake fool you! It is extremely moist and packed with flavours. And be warned, it is very filling too. After eating 2 slices, Ben looked at me and said that this is easily one of the best cakes he has eaten, and he couldn’t believe it as it looks so plain. Give this recipe a shot if you enjoy light, moist, fluffy, buttery cakes =)


1 1/2 cup castor sugar

1 tsp vanilla extract

150g blueberries (you can substitute with other fruits)

2 1/4 cup self raising flour, sifted

250g butter, softened

250g cream cheese, softened

1/3 cup whole milk

3 eggs
1. Preheat oven to 160deg. Grease 2 baking tins (1 square + 1 loaf or 2 Loaves)

2. Beat butter, sugar and vanilla till pale and fluffy. Add in eggs, one at a time and beat well.

3. Add in cream cheese and milk. mix till smooth
4. Add flour, beat briefly till mixed.
5. Fold in Blueberries.

6. Bake 50mins for loaf tin or fully filled square tin, 40mins for half filled square tin. Insert skewer in the centre to check that it’s done.
