Mini Chocolate Cupcakes


This recipe is adapted from and is officially my mom and Benny’s favourite cupcake. I will feature the buttercream frosting in another post.

Ingredients: (Makes about 80+ mini cupcakes)

2 cups sugar
1 3/4cup plain flour
3/4 cup coca powder
1 1/2 tsp baking powder
1 1/2 baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup oil
2 tsp vanilla
1 cup boiling water


1. Preheat oven to 180deg
2. Sift sugar, flour, cocoa powder, salt, baking powder and soda
3. Whisk eggs, milk, oil and vanilla together
4. Combine wet and dry mixture, mix well
5. Add boiling water, stir to combine
6. Bake for about 15mins until toothpick comes out clean when inserted in centre
