Cheesy Potato Korokke/Croquette

Now with our super awesome deep fryer, we can be fatties everyday! wahahaha! I love korokkes as its really crispy on the outside but so smooth, creamy and yummy on the inside! nom nom nom…

Ingredients: (yields 16 korokkes)

1. 2 large potatoes

2. 1 cup grated cheddar cheese

3. 1/2 onion chopped

4. 2 eggs (well beaten)

5. 1/2 cup plain flour

6. 1 cup panko/bread crumbs

Method:

1. Boil potatoes till tender and mash it while it’s still hot

2. Mix potato, cheese and onions together. Season with 1/2 tsp salt and black pepper

3. Form puffs/balls with the mixture. Coat with flour first, then egg, lastly bread crumbs

4. Deep fry till golden brown

Serve hot with japanese mayo or your favourite sauce
